Crowds are flocking to Paris’s “bouillon” restaurants, which serve classic French comfort food at modest prices. The egg mayonnaise at “Bouillon Pigalle” — a modern take on bouillon dining– was recently voted “best in the world,” and older outposts where you can eat amid Art Nouveau splendour for as little as 20 euros for three courses, are having something of a revival.
