Victor Dumas, 21, believes cutting joints of meat “à la française” (the French way) is best. Now he wants his “art” to be recognised by UNESCO: “We get meat quality through animal welfare,” says the apprentice butcher, who is embarking on a second ‘Tour de France’ to promote his profession and attract more young people to it.
